What is a good way to keep dogs off counters?

If you want to cure him quickly and permanently go to Dr Fosters.com and buy a remote control shock collar. You can put the shock on different levels so there is no need to worry about hurting him on a low level, it will just startle him... this way you will not be connected to the punishment such as wacking the counter, or throwing a can with pennies (he will only sneak and do it when you are not around) a prong collar is not a nice thing.. to jerk him down with the prongs around his neck .. uh that is just not a good solution. You only need to be within range with the remote when he jumps on the counter or anything else and you give the command down or whatever you use.. if he does not respond immediately, you can push the button for a short slight shock that will surprise him and he will respond. I have a shock collar for training and yes, i have put it on my own leg to test the shock levels before using on my dog... the low level is enough to just surprise them and they will respond. Make sure you wear the collar on them for several days before you turn it on because you dont want them to figure out that when they dont have the collar on they cant be buzzed... they are pretty smart that way! lol Good luck and although shock collars get a bad rap they are very useful when used correctly and make sure you buy one that you can control the level of intensity.
